Happy Wednesday, friends! I can’t wait to share with you this recipe! Come check out my husband’s latest recipe for scallops with zucchini salad! It’s divine!
Yesterday while pondering what we should cook for dinner, we went through a list of meats we had in the freezer. Since we haven’t had scallops in a while, we decided that would be something quick and easy. So, while we were thawing the scallops my husband, Brad, looked up some easy recipes using what we had on hand. He came up with a Zucchini “salad” recipe by Fifteen Spatulas. Naturally he had to tweak it to make it his own. So, here is the recipe and then what we added.
Zucchini Salad
1 large zucchini sliced into very thin slivers (with the skin intact) then cut into thirds
½ cup crumbled Feta Cheese
½ cup chopped fresh parsley
2 scallions sliced
2 Tablespoons very good Extra Virgin Olive Oil
1 tablespoon good aged Balsamic Vinegar
Salt and pepper to taste
2-3 ounces washed and dried arugula
Toss all ingredients in a large bowl close to serving time.
NOTE: We added about a dozen small cherry tomato bombs cut into quarters and 1 heaping teaspoon minced garlic. (Now it’s officially Bradford’s!)
While the flavors in the salad were melding, Brad seasoned the scallops with some olive oil, salt, pepper and garlic. He pan seared the scallops in a cast iron pan over medium heat for a few minutes per side. (or until they are caramelized)
We tossed the salad once more and put it on our plates. Then we topped it with the scallops hot off of the stove. Red wine topped off a perfect meal!
I’m telling you the flavors just exploded in our mouths! The combination of the arugula and the feta cheese was amazing!
Even though the zucchini was not cooked, it was tender-crisp and delicious! We had all of the ingredients on hand and it was such a quick and easy meal to put together.
And the dish was so pretty and colorful, too! Don’t you love it when you cook a meal that is so satisfying and delicious yet you don’t feel stuffed and miserable at the end? Plus, it’s low calorie, low cost, and good for you! Score another one for Bradford!
