Happy Tuesday, friends! Today I want to share with you how to make delicious blueberry muffins the easy way! Come check out my Krusteaz Blueberry Muffin hack!
I enjoy baking but sometimes I just want a quick fix with that homemade taste. So, yesterday I decided to make some blueberry muffins with the last of our fresh blueberries. I had a box of blueberry muffin mix by Krusteaz in my pantry and decided to use that as my base. (The directions on the box call for water, vegetable oil and 2 eggs in addition to the muffin mix and blueberries.)
I followed the directions on the package except I discarded their canned blueberries and substituted fresh ones from our lake house instead! NOTE: I hand mixed the batter instead of using my mixer then gently folded in the fresh blueberries. (about 1 cup.) I used some cute muffin liners with a fall motif and divided the batter equally into the 12 cups. (about ⅔ full)
For that bakery taste I decided to also top them with a homemade streusel crunch. The streusel was easy to make and only had 4 ingredients.
STREUSEL CRUNCH TOPPING:
½ cup all purpose flour
½ cup sugar
½ teaspoon ground cinnamon
¼ cup melted butter
Mix all ingredients well until it forms a crumble. (You may need to use your hands to mix it thoroughly.) Sprinkle the streusel on top of the muffins before baking.
Bake at 400 degrees for 18-22 minutes or until golden brown. I ended up baking mine 23 minutes because I thought the streusel might make it take a bit longer. And it did.
The crunchy streusel on top made the blueberry muffins in my opinion!
It’s funny how a few simple changes can make a box mix taste like homemade! And these were SO tasty my husband insisted we give them away immediately. So we did. (I did eat one just because I HAD to. A recipe must be sampled in the test kitchen before I can recommend it. I took one for the team. You’re welcome! LOL)
