Today my husband and I were looking for something quick and easy to make for lunch without making a trip to the grocery store. I remembered I had a few cans of Tyson White chicken in the pantry, so I decided to make chicken salad. (This is a trick I learned from my Mother. She likes to keep canned chicken on hand for this very purpose!) It’s so easy!
CHICKEN SALAD RECIPE:
2-12.5 ounce cans of white chunk chicken, drained and chopped up
3 stalks of celery thinly sliced
3 green onions, chopped
¼ cup mayonnaise
½ cup Kosher Dill pickle relish (or chopped kosher dill pickles)
1 teaspoon mustard (optional)
salt and pepper to taste
***You can also add chopped grapes or dried cranberries for added flavor.
Mix all ingredients together. Serve immediately or put in air tight container and store in the refrigerator.
We like to serve our chicken salad on a salad with mixed greens, but it’s also delicious on bread or a croissant.
You can put together this chicken salad in minutes, especially if you use pickle relish. We ate some for lunch today and have enough for leftovers later this week. And, if you buy the canned chicken at Costco, you’ll not only save a few dollars but have extra cans to keep on hand!
