TGIF, my friends! This has been a crazy busy week so I haven’t been around here much. And because we are heading into the weekend, I thought I’d share with you a quick and easy recipe! Well, sort of a recipe. More like an idea. It’s pretty self-explanatory, but we got the idea from a restaurant we visited recently. Come see!
A few weeks ago Brad (my hubby) and I went to Charlotte to the fabulous restaurant, La Belle Helene. If you haven’t been, this place is not only beautiful, but the food and service is amazing!!! The entire space is decorated in black and white, which you know is my favorite thing ever!
They even have private dining rooms. Isn’t this place gorgeous?
After a few yummy appetizers, I ordered the scallops, which were delicious! La Belle Helene’s chef plates a beautiful dish!
Brad ordered the salmon over a bed of pureed peas with carrots. This is the mouth watering view of our entrees and side dish, which was macaroni and cheese. (Also amazing!)
Whenever my husband and I go out to a nice restaurant, we like to try different things, then try to recreate the dishes at home. Since we both love salmon, and it’s easy to find at the grocery store, we decided to make his salmon dish at home. Basically, all we did was cook a can of LeSueur baby peas on the stove with a bit of butter, salt and pepper. Meanwhile, we cooked the carrots in chicken broth with the same (butter, salt and pepper) until tender. We seasoned the salmon with salt, pepper, garlic powder, olive oil and a bit of lemon juice. Brad slices more lemons and grills the salmon on top of the lemon slices. Once the salmon was grilled, we drained the peas and added a bit of cream and pureed them with a hand mixer. (Or you can use a food processor.)
To serve the dish, put the pureed peas on the plate and top it with grilled salmon and add the carrots on the side. This is an easy dish to make and inexpensive as well! So, if you like the three main ingredients in this dish, you should give it a try. It’s a unique spin on basic peas and makes for a nice looking dinner! And if you want to get fancy, you can add a fresh garnish such as parley on the side. Obviously you can make as much of this as you like by using more of everything, but one 15 ounce can of peas is plenty for 2 people.) Hmmm. This is making me hungry!
