Greetings and Happy Wednesday! How was your 4th of July holiday? Ours was filled with lots of family, fellowship and food! I took a platter of easy fruit appetizers to my Mother’s house yesterday. They were a snap to make and so festive!
I did a lot of cooking over the last few days getting ready for two July 4th celebrations. One at my Mother and Dad’s lake house and one at Happy Hill. I made aioli chicken, pasta salad, corn on the cob, banana pudding, guacamole, chocolate cake, chocolate mint cookies and fruit appetizers. Whew! Lots of cooking but I enjoy it when I have plenty of time. This is our first blueberry harvest this year!
This year we are thrilled to have lots of fresh blueberries from our bushes at Happy Hill. Last year we didn’t get any, perhaps we missed the timing or else the animals beat us to them. So in addition to making blueberry pancakes and waffles, I made some cute little fruit picks to take to my Mother’s house.
I had some 4 inch wood toothpicks with red and blue frills on hand. I just poked the fruit onto the toothpicks and put them on a platter. I used slices of banana, strawberries and blueberries on each pick. I was worried about the bananas turning brown before we got to my Mom’s so I put the banana peels over top of the skewers and put aluminum foil on top. And it worked! I think it tricked the bananas into thinking they were still inside the peels. I found this little wooden fish platter at an antique store for $2. It’s one of my favorite trays to use at the lake.
It turned out to be a perfect little appetizer and so colorful and fun for a patriotic holiday! I wanted to try a sheet cake with white icing, blueberries and strawberries to make an American flag but I ran out of time. Below is an idea I found on Pinterest for another red, white and blue themed snack. Maybe I’ll make something similar for Labor Day.
These are some of our blueberries. In a few days we should have another bunch to pick. Since they freeze well, we can enjoy them later this year too! See the ripe ones? I just ate them. 😉
