Happy Wednesday, friends! Today’s blog post is a quicky, but I wanted to share it. And who doesn’t love a quick and easy recipe? Come see how to jazz up a Ghirardelli Double Chocolate Brownie mix! It’s delicious!
A friend of mine recently told me her secret to her delicious brownies and shared it with me. She takes a box of Ghirardelli Double Chocolate Brownie mix and makes it according to the package directions. Then, she adds 1 teaspoon of instant decaffeinated coffee grounds to the mix. When I made some brownie bites for our neighborhood picnic, I thought she said she adds a tablespoon so that’s what I did. In addition I added ½ cup chopped pecans. It turned out to be a happy mistake! I thought mine were delicious, despite the extra coffee! (I used Folgers.)
Once the mix is made, grease the muffin tins with spray Pam and fill each hole ⅔ full. Bake at 350 degrees for 12-15 minutes or until done. The center should be soft, but don’t over cook!
After pulling the baked brownies out of the oven, use a knife and gently loosen the brownies from the pan. Then allow to cool. If you like, you can frost the brownie bites with chocolate icing or ganache. But, I think they are delicious as is! They were certainly a hit at the picnic!
