TGIF, my friends! Today I want to share with you a recipe given to me by my sweet sister. It’s sort of a double recipe, because not only can you make these delicious cookies, but you can turn them into a decadent ice cream dessert! Come see how to make Almond Amaretto Cookies!
My sister, Wendy, and her husband came to town to visit last week and we invited them for dinner. We decided to grill some salmon and have a salad and she volunteered to bring dessert. And we never say no to dessert! Wendy made these delicious almond amaretto cookies ahead of time and brought them along. She also picked up some butter almond flavored ice cream and Amaretto.
For the dessert, we started with some pretty vintage compotes which belonged to my husband’s grandmother. We added one almond butter cookie, a few small scoops of Butter Almond Ice Cream (by Breyers) and topped it with some Amaretto. And, it was DELICIOUS!!! I mean, the cookies were so good on their own, but by adding some ice cream and liqueur, it took this dessert to a whole new level! It’s pretty too, right?
So, without further ado, here’s the recipe!
ALMOND AMARETTO COOKIES
Ingredients:
*1 stick butter, softened
*½ cup sugar
*1 egg
*1 ¼ cup plain flour
*½ cup almonds, ground in food processor
*3 teaspoons Amaretto Liqueur
*1 teaspoon almond extract
*sliced almonds for topping (3 per cookie looks nice)
Directions:
*Preheat oven to 400 degrees.
*Cream together butter, and sugar.
*Beat in egg, Amaretto, ground almonds and extract.
*Gradually add flour and mix well.
*Drop by rounded teaspoons onto lightly greased cookie sheet.
*Flatten dough with the back of a spoon and place several sliced almonds on top of each cookie.
*Bake for 5-10 minutes until lightly colored.
YIELD: approx. 1 ½ dozen cookies
Wendy left the ice cream, cookies and Amaretto with us and my husband and I had some again last night for dessert. Thank heaven the cookies are now gone and I won’t be tempted by them! (Until I make more! LOL). Thanks so much Wendy for the recipe and coming to visit! We really enjoyed it!
