Happy Tuesday! Today I’m taking a short break from my Christmas decorating and making one of my favorite soups. With an Arctic blast quickly approaching, nothing tastes quite as good as hot vegetable soup!
The temperature tomorrow is supposed to be 24 degrees. Brrrr! Perfect soup weather! This recipe is from AllRecipes.com. The beauty of the recipe is you can add any vegetables you have on hand. My Mother likes to stick leftover veggies in the freezer and brings them out and adds them to her soup. This recipe is also great for the crock pot. You just need to brown the ground beef before hand.
Vegetable Beef Soup:
1 medium chopped onion
1 lb. ground beef (browned & drained)
14 oz. can chicken broth
12 oz. V-8 juice
1 cup water
2 large white potatoes peeled & diced
3 carrots peeled and chopped
2 stalks celery chopped
14.5 oz. can diced tomatoes
1 14.5 can green beans drained
1-14.5 oz can corn kernels drained
1 cup fresh or frozen okra (optional)
1 tsp. creole seasoning
salt and pepper to taste
Directions: Brown the ground beef and onion. Drain and add the remaining ingredients to a large pot. Cook until the potatoes are soft. (about half an hour) This can also go in the crock pot.
