Happy Thursday, friends! Today’s blog post was supposed to be about a DIY wreath, but the paint isn’t dry yet. LOL. Anyway, I wanted to share with you this EASY recipe and it’s SOOOO good. Especially if you like tomatoes. Come check out this tomato relish recipe!
My husband is retired and he really enjoys cooking now. This is great news for me because he’s a great cook and loves to experiment with new dishes. We try to eat healthy meals for the most part, which includes a lot of fish and white meats. And this tomato relish is good on everything!! So far, we’ve had it on tuna, pork chops, chicken and sea bass. And while I claim this is a recipe, it’s really just a suggestion, as all of the ingredients are subject to your own personal taste buds! Here goes! Start with Sugar Bombs cherry tomatoes (or any other cherry tomato, but these are our favorite! This is a 12 ounce container. Simple wash the tomatoes, and cut them into quarters. (or smaller if you like.)
In a bowl add the chopped tomatoes, add about 1 teaspoon minced garlic (we use real garlic), the juice from ½ of a lemon, a dash of olive oil and salt and pepper to taste. Mix well, cover and put in the refrigerator for the flavors to meld. You can adjust any of the spices to best suit your pallet. The other night we grilled some salmon, put it on a bed of fresh arugula, and topped it with the tomato relish. We served broiled asparagus on the side. It was DELICIOUS. And so healthy! Another bonus, it’s such a colorful and pretty dish too! Win-win!
Last night as we were discussing what to have for dinner along with our pork chops, the relish came up again and how much we love it. So, we made it again! This time we served the tomatoes on top of arugula as a side dish along with green beans. Then we just pan seared and cooked the chops in the oven. Again, delicious!
So, no, this is not a recipe per se, but it is so refreshing and light. Not to mention easy and inexpensive! Give it a try! I think it will be especially good this summer for a light and easy meal!
