TGIF, my fiends! Did you know January is National Soup Month? Neither did I! However, this suits me just fine. What better way to start a cold and dreary weekend than with a hot, delicious taco bean soup? Pop over for the recipe!
I got this recipe a few years ago from my sweet sister-in-law and it has become a family favorite. Technically, I suppose it is a cross between a soup and a chili, but no matter what you call it, it’s yummy! Also, this recipe makes a lot, so you can share it, or freeze the leftovers. I tweeked the recipe just a bit since we like lots of beans and an extra kick, but you can leave out a bit of the spiciness if you prefer a more mild soup/chili.
Here is the recipe:
TACO BEAN SOUP RECIPE:
Brown and drain:
2 pounds lean ground beef (or turkey)
2 chopped onions
1 teaspoon chopped garlic
ADD:
1 small can chopped green chilies
1 tsp. salt
½ tsp. fresh black pepper
1 pkg. dry Taco seasoning mix
1 pkg. dry ranch dressing mix
3- 10 ounce cans stewed tomatoes with juice
1 can undrained Rotel tomatoes
1-15 oz. can kidney beans, drained
1-15 oz. can cannellini beans, drained
1-15 oz. can pinto beans, drained
1 large can Hominy undrained
1 jalapeno pepper diced (With or without seeds, depending on how spicy you like it!)
***Cook until tender. Serve with grated cheddar cheese and Frito scoops.
TIP: I like to make it on the stove then put in a large crock pot to keep warm. Also, you can use any mix of beans, such as light and dark kidney beans or cannellini beans. It’s all good!
This recipe is great for a crowd, too. In the past we’ve served it at our Super Bowl Parties. The crock pot keeps the soup warm and is easy to ladle out into small serving bowls with cheese and Fritos on the side. It’s always a hit! I also like to make this recipe when we are expecting a lot of company for the holidays. When folks are traveling and getting in at different times, it’s nice to have a hot meal ready when they arrive. I’m going to make a pot this weekend! What’s your favorite soup?
