Greetings and happy Post-Thanksgiving to you! We had a perfectly lovely Thanksgiving dinner with some dear friends and now it’s back to reality! As part of our contribution to the meal, I brought along one of our favorite appetizers, Ranch Sausage Stars. They are easy to make and always a hit!
On Thanksgiving Day I made the sausage and the filling for the sausage stars ahead of time. I stored it in a plastic container in the refrigerator until it was time to go to the party. Once we got to our friend’s house, I filled the Tortilla Scoop Chips with the filling and baked them. So easy! These are the scoops I use. They are also available in party size!
I got this recipe a few years ago from my older sister. She brought them to a family brunch and they were an instant favorite! The entire tray disappeared in short order and everyone requested the recipe. So, here it is! I think you’ll love it too!
RANCH SAUSAGE STARS
1 pound hot Jimmy Dean Sausage, browned and drained
2 cups sharp shredded cheddar cheese
1 red bell pepper, diced (in food processor if you have one)
1 can sliced black olives, drained (2.25 ounce)
1 Package dry original ranch dressing mix
1 cup mayonnaise (I use Duke’s)
1/2 cup milk (can use 1%)
1 bag “Scoop” Tortilla Chips
Instructions:
Whisk together ranch mix, milk and mayo. Add the other ingredients. Spoon about a heaping teaspoon of the sausage mix into each scoop chip and bake at 350 degree (preheated) oven for approx. 10 minutes. Tip: For easy clean up I like to line the cookie sheets with aluminum foil.
The original recipe called for using wonton wraps and pre-baking them, and then add the sausage mix and bake again. Using the Tostido Scoops saves this step and they are just as delicious! (photo credit-food.com)
This is such a simple and yummy appetizer. As I said, you can make the mix ahead of time and store it in the refrigerator until it’s time to serve them. It is also easier to transport them this way too and make sure they are nice and hot when you serve them. Just watch them disappear. Enjoy!
