It’s that time of year again! Pumpkin Season! Well, it’s Fall, but we all know the two go hand in hand. I actually bought an entire cookbook dedicated to pumpkin recipes. I thought I’d give a few of them a try!
Today I decided to make pumpkin muffins with a cream cheese swirl. It took me about 20 minutes to make them and I cooked them for 20 minutes in my preheated oven. This recipe makes 18 muffins just like it said. The recipe said to fill the cupcake baking cups ¾ full and then put a 1 tablespoon dollop of the cream cheese filling on top. Check. I swirled the cream cheese filling throughout just like it said. It looked pretty.
Then I baked them as directed. They looked even prettier when cooked!
Then I tried one and was disappointed! They are too sweet and the cream cheese swirl makes it taste mushy. So, I’m not going to share this recipe. If anyone has a better pumpkin muffin recipe, please let me know. Isn’t it so disappointing to go to the effort to make something and have it not turn out? I thought I would share my epic fail because I have a feeling everyone has a few of these too. I will mark a big fat NO in my cookbook beside this one. (even though they are pretty)
Thus, I am trashing the muffins. Normally I give my neighbor a sample of my baked goodies, but I am too embarrassed to give these away. I am sad I wasted my time and money on these. I will not give up, however. I’m not going to think about my failure today, but think happy thoughts about my Veranda.
There is a dog biscuit recipe with pumpkin that I plan to try soon. Trust me, if Lacey likes it, then it’s good. She has a picky pallet like her Mother. Hope your day is more successful than my morning! xoxo
