Happy Thursday, friends! My husband and I love trying new recipes and we recently found a new one that will work no matter what time of year if you love a good salad! Come check out a Lebanese Salad by Joanna Gaines!The other day we watched Joanna Gaines’ new cooking show and saw a recipe for a Lebanese Salad. My husband and I love eating light so any salad without a heavy dressing is a winner in our book. So, I’ll give you Joanna’s recipe as written then I’ll tell you how we modified it. Here goes!
JOANNA GAINES LEBANESE SALAD
INGREDIENTS
- 4 Vine ripe tomatoes, diced
- 4 English cucumbers, diced
- ½ cup minced white onions (optional)
- Juice from 1 lemon
- ¼ cup extra virgin olive oil
- 1 tsp. kosher salt
- ½ tsp. black pepper
INSTRUCTIONS
- Toss together all ingredients
- Eat immediately or cover and refrigerate up to 8 hours.
***For our version of the salad, we used mixed greens and romaine lettuce, black olives, red peppers and instead of white onions we used chopped red onions. (I also used one large seedless cucumber instead of the 4 english ones called for in the recipe.) This salad is so refreshing and tasty! Of course you can add any other ingredients you like, including Feta cheese, which we will do next time!
We liked this salad so well we had it two nights in a row! The second night we grilled some salmon and put it on top. Delicious! Not only is this dish easy and tasty, but healthy and colorful too! Impress your guests with this make-ahead dish and add some delicious Italian bread or rolls!
