Happy Tuesday, friends! Today I want to share with you one of our favorite dishes. Meatballs! They are great as an appetizer or part of a main meal. Come check out our newest easy meatball recipe!
Last year my husband stumbled upon a cooking show on uTube called “Sam, the Cooking Guy.” We watched several episodes and wrote down some of his recipes. Everything we’ve tried so far has been great and his recipes tend to be super simple too. That’s my kind of cooking! For Christmas I bought my husband a few of his cookbooks and we’ve tried several of his recipes from them as well. So, this is Sam’s recipe verbatim, then I’ll tell you how we tweaked it for us!
Sam The Cooking Guy’s Meatballs
Ingredients:
8 ounces ground beef
8 ounces ground pork
8 ounces ground veal
½ cup ricotta cheese
⅓ cup shredded parmesan cheese
½ cup Panco bread crumbs
2 large garlic cloves, minced
1 teaspoon kosher salat
1 teaspoon freshly ground black pepper
½ teaspoon red pepper flakes
1 large egg
INSTRUCTIONS:
1-Preheat over to 400 Degree F.
2-Put everything into a large bowl and mix well-with your hands please, not a spoon.
3-Roll into balls and place on a parchment-lined baking sheet.
4-Bake for about 15 minutes, or until cooked all the way through.
5-Boom.
(I told you it was verbatim. This guy is so funny.)
So, we made a few changes to the recipe simply because of what we had on hand. Instead of the 3 ground meats Sam suggested, we used one pound of ground turkey and one pound Jimmy Dean Hot Sausage. We didn’t have any ricotta cheese, so we just added extra Parmesan cheese. Also, we made a red sauce out of Cento San Marzano Peeled Tomatoes, added the meatballs and served over pasta. It was delicious!
And here’s one final tip. We only ate about 8 of the meatballs so we vacuum packed the rest into packages of 7 or 8 for future meals. If we decide to have pasta or spaghetti one night, all we need to do is pull a pack of the meatballs out of the freezer and pop them in the sauce. So easy for weeknight meals!
