Happy Monday, my friends! Did you catch the amazing win by the Kansas City Chiefs yesterday? My husband and I were pulling for them, so we were quite pleased with their victory. We went to a party in the neighborhood and took some pull-apart pigs-in-a-blanket and a tray of cupcakes. Come see the best chocolate buttercream frosting recipe I’ve found!
Later I’ll share with you the pig-in-a-blanket recipe that I got from Martha Stewart, but today I’ll share the best chocolate buttercream frosting! This recipe is from @The Stay at Home Chef and from “The Most Amazing Chocolate Cake” recipe I got from my niece. In the essence of time yesterday I decided to use a box mix from Betty Crocker for the cupcakes. I made the mix according to the package directions and it yielded 24 cupcakes. (filled ½ full)
Although I had some chocolate frosting on hand, I decided to make my own. (For that homemade taste of course!) Here’s the recipe!
CHOCOLATE CREAM CHEESE BUTTERCREAM FROSTING RECIPE:
Ingredients:
- ¾ cup butter softened
- 4 ounces cream cheese softened
- ¾ cup unsweetened cocoa powder (I used Ghirardelli)
- 1 ½ teaspoon vanilla extract
- 4 cups powdered sugar
- about ¼ cup milk
Directions:
1-In a large mixing bowl beat together butter and cream cheese until fluffy. (For best results use an electric mixer.)
2-Add cocoa powder and vanilla extract. Beat well.
3-Beat in powdered sugar, one cup at a time. Add milk as needed to make the frosting into a spreadable consistency.
4-Ice the cooled cupcakes generously.
5-Lick the beater.
This icing recipe is one of the best I’ve tasted and makes more than enough for 24 cupcakes. After I iced all of the cupcakes I placed them on a silver serving tray and added these fun little plastic football picks I had on hand. Perfect for a Super Bowl Party!
NOTE: I ended up using a bit more milk because the icing was so thick, but you can be the judge. The cupcakes turned out delicious and festive! This recipe generously iced 24 cupcakes with some leftover. It could easily be used on a pound cake or layered cake as well. Next time maybe I’ll make chocolate cupcakes with this icing for double the chocolate fun!
