Happy Tuesday, my friends! I want to share with you a yummy new recipe we made last night for dinner. My husband and I try to eat pretty healthy meals and I’ve been looking for some new, easy recipes. I found this one online when I googled “Beef Tips with rice and beef broth”.
Brad and I are trying to change our diet for all of the usual reasons. We’ve decided to try to go gluten free, non-GMO, and cut out refined sugar, flour, and high carb foods. Good luck, right? So I spent a ton of time at the grocery store yesterday in the gluten free aisle reading labels and trying to familiarize myself with the brands.
In addition, we are attempting to eat only pasture raised beef, free range chicken and no hormone treated animals. It’s tough. And expensive! It seems as though the organic and gluten free products are more expensive. So, last night we tried a new dish that checked off most of the boxes for the new diet. And it wasn’t crazy expensive either! Here’s the recipe!
BEEF TIPS WITH RICE AND BEEF BROTH GRAVY
~1 pound Sirloin tip or stew beef meat cut into small bite size pieces (pasture raised if possible)
~3 cups Pacific Organic Beef Broth (low sodium and gluten free)
~1 medium size onion chopped
~2 cloves of garlic, minced (or to taste. we always add more.)
~1 tablespoon extra virgin olive oil
~8 ounces chopped mushrooms (optional, but delicious!)
~2 Tablespoons Cornstarch (ARGO is gluten-free)
~Salt and pepper to taste
~2-3 cups prepared rice (We used Rice Select Jasmati Brown Rice)
INSRUCTIONS:
1-Cut beef into small bite size cubes
2-Add olive oil to a medium size pot over stove on medium heat.
3-Add Onions and Garlic.
4-Stir fry onions and garlic for about 2 minutes then add beef tips.
5-Stir the meat and onion/garlic mix until the meat is lightly browned.
6-Add the beef broth and mushrooms and bring to a rolling boil.
7-Cover, reduce heat to medium low and simmer for about an hour or until meat is tender. (Mine took longer than an hour, so allow extra time. Can also use a crock pot.)
8-When beef is tender, mix cornstarch in a small bowl with a bit of cold water. Stir well.
9-Slowly add the cornstarch mix to the beef and broth, stirring constantly.
10-Simmer another 10 minutes until gravy has thickened.
11-Serve over prepared brown rice. (We used Jasmati Brown Rice, which is gluten free)

This dish was so easy to make and was so delicious! We served it with a side of green beans. I think next time I will make it in the crock pot so the meat is even more tender. But the gravy was very flavorful and rich tasting and the mushrooms added a nice touch. This dish would also be great over a bed of noodles. Gluten free, of course! (I should have taken a picture of my happy plate at the end. Not a morsel left!)
Realistically we’ll see how long this gluten free diet lasts. But, we are giving it a shot. I wonder if we will see results quickly? This recipe is modified from Taste of Southern.
