Happy Wednesday, Friends! Today I want to share a delicious recipe my husband tried recently. It’s a Mediterranean Tomato, Cucumber and Avocado Salad. Not only is it amazing, but pretty to boot! Check it out!
My husband, Brad and I are trying our best to eat healthy by choosing low calorie and gluten free recipes. I’m amazed at how many gluten free products there are these days and for the most part they are as tasty as their counter parts. So, this salad recipe is obviously gluten free as well as delicious and pretty! Brad found this recipe online and we tweeked it a little. (of course, so now it’s “Bradford’s Mediterranean Salad” LOL) So, without further ado, here’s the recipe!
MEDITERRANEAN TOMATO, CUCUMBER & AVOCADO SALAD
1 ½ cups chopped tomatoes (we use the campari tomatoes but cherry tomatoes would work fine too)
1 seedless cucumber, sliced and quartered
1 avocado diced into bite size pieces
1 handful chopped cilantro
2 Tablespoons chopped red onion
1 Tablespoon olive oil
1 teaspoon chopped garlic
Salt & Pepper to taste
Juice of ½ lemon (or to taste)
4 ounces Feta Cheese (optional)
Toss all ingredients together and enjoy!
We left out the feta cheese this time since we didn’t have any on hand and it was still very good! We served it with pan seared chicken for a light and satisfying meal.
NOTE: Since this recipe has avocado, you may want to add this ingredient last if you are making this salad in advance. We’ve also substituted the cilantro with arugula. The beauty of this salad is you can add whatever ingredients you like and it’s still colorful and fresh.
This salad is so simple to make you can whip it together in minutes. And this time of year when vegetables are fresh and plentiful it’s easy to keep the ingredients on hand. I can’t wait to try my hand at having an actual garden when we move South!
